Nothing says comfort like soup, and nothing says soup like a burst of cold weather. Don't you think?
I've been sick for over two weeks now, so I've been cooking and baking a little less (hence no Muffin Monday this week), but still indulging in more than my usual share of fall-flavoured soups. A creature of comfort on the best of days, I seek these kinds of foods out all the more often when feeling under the weather.
Roasted Red Peppers
Beautiful Butternut Squash
browsing what felt like hundreds of butternut squash soup recipes, I
came up with my own version: Butternut Squash Soup with Roasted Red Pepper Purée. There is a link to the recipe below, but for the purée, I did glean inspiration from my
friend Elena's blog, 3 Green Onions. She made hers with parsley and
Parmesan, which I substituted for roasted red pepper and Asiago cheese. (Check out her baby boy in those photos! Adorable, right?)
to the wonderful Nelly Rodriguez and her social networking skills, I was put in touch with the lovely people at Fine Dining Lovers: an incredible website devoted
to publishing content for food enthusiasts around the world. They were
looking for recipes for their Thanksgiving feature that was posted earlier today -
with the holiday coming up this weekend in the US - and I'm beyond
excited that I was able to contribute!
I also had the great pleasure of guest-posting for my friend Helene Dsouza's blog today, Masala Herb. It being the first time a request like this has come my way, I was thrilled when Helene contacted me. Masala Herb is an excellent resource for so many internationally-inspired recipes, and Helene's warmth, expertise, and love of food really shines through. Helene and her husband own a restaurant in Goa, India, and I hope I get to visit it some day!
I'd love it if you could head over to Masala Herb to see my recipe for Kitchen Sink Chicken Soupand let Helene and I know what you think of it!
What kind of soup comforts and soothes you when you're feeling under the weather?
